The story & purpose
Pongal is Tamil Nadu's great thanksgiving. On Bhogi the old is discarded and burnt; on Thai Pongal the new rice is boiled in milk and jaggery in a decorated pot facing the sun, and the moment it boils over the household cries 'Pongalo Pongal!' — abundance overflowing.
Mattu Pongal honours the cattle who ploughed the year's fields — horns painted, garlands tied. Kaanum Pongal is for seeing people: outings, elders, and the knots of family retied for a new year.

Bhogi cleansing
Homes cleaned, the unusable given to the Bhogi fire, kolam drawn fresh at dawn.
Boiling the Pongal
New rice, milk, and jaggery boiled sunward in a new pot; the overflow is the omen of plenty, then offered to Surya.
